We present a two-dimensional trapped-ion quantum simulator to explore the 2D transverse-field Ising model with flexible interaction range. Its heart is a novel linear Paul trap capable of creating stable trapping conditions and sufficient control to routinely operate with ion crystals up to 105 particles. We implement the transverse-field Ising model and demonstrate the build-up of quantum correlations after a global quench and the creation of spin squeezing with Wineland parameters of 11 dB in a 91-ion crystal. On top, we make use of variational optimization to tweak the parameters of multi-layer protocols to further enhance the achievable squeezing.
